Firstly,
making a dough:
1. All purpose flour: 3 cups
2. Water(cold/warm are both fine ): 1 and 1/3 cups
Put them together, stir and press it until it become smooth, then wrap it and put it into refrigerator, or you can just leave it in room temperature. 30 minutes will be fine, but the longer time will be better. I usually do it one night before.
Secondly,
Making the fillings:
(一) Ingredient:
1. Chopped Chinese cabbage: 1 (middle size) or Chives or Celery or any vegetables you like.
The most important thing is chop cabbages and squeeze out the juice, otherwise, it is hard to close the dumpling.
2. Ground pork or beef or shrimp (choose what you like)
3. Chopped Ginger (as much as you can accept).
4. Chopped Green onion (as much as you can accept)
Both ginger and green onions are good for get rid of the smell from meat. So you can add as much as you can accept
(二)spieces:
Salt、chicken power、garlic powder、white pepper powder、a little bit of soy source(until the filling color looks like in my picture)
(sorry that I have never measured them, just from experience. You can try the amount as you usually do for cooking other dishes)
Put all of them together, and stir them, try a little bit for sure the taste is fine.
Thirdly,
Making the wrap. and then making the dumpling. Any shape is fine, just need to close it firmly. It is a tedious process but it is worthy for your beloved family members. Practice makes perfect. You have already seen my demo for making it.
Lastly,
Boil the dumplings.
Meanwhile, make some source(salt、chicken power、vinegar、sesame oil、ground garlic、 chilly source or oiled pepper power)。It depends on your own taste.
